The only way I know is to use a Personality as follows:
1) Setup a Personality and specify the particular folder to use for Sent Items for that Personality.
2) Compose or reply to an email.
3) In the 'From' dropdown menu, select the Personality that uses the folder you want to use for the sent items.
4) Send
