Your Gandi e-mail accounts are totally separate to your FastMail account, so you can still log in to them using your existing login information, but cannot receive e-mails to those Gandi accounts.
You could still send from them, but I would suggest that your SPF record(s) would include the Gandi servers in addition to the FastMail servers.
