This is an old Spamgourmet feature, but it was off by default. Presumable erine has made it mandatory because rewriting the "From" header also solves the DMARC problem with forwarding. Everything leaving the server, in either direction, will have the erine domain in its header.
The creator of erine wrote: "I was a strong Spamgourmet user for years, before its discontinuation". I haven't used it recently but SG does appear to be up at the moment.

The normal use case for this service is that you type these addresses into web forms. In that case you expect to get an incoming email of some sort before you need to send an outgoing email. You can just search your archive for that.
With SG there was also an account stats page that listed every address used.
