But to blatantly advertise your service (which really belongs on your social channels) here is, IMHO, not entering into the true spirit of EmailDiscussions.

While end-to-end encryption is a must to make sure no-one can read your personal information, calling it a matter of 'user choice' is just an attempt to side-line its real importance. The very reason for doing that by all mainstream providers is their 'business model', which works on selling the user data!

The more encrypt the better!

Is there a designated, stripped down, site with only a login frame, or do you have to enter the website and login via the upper right corner every time?

No, the homepage is the default login page for Mailfence webmail.
However, a lighter version (for mobile devices) exhibits a stripped-down login page: https://mailfence.com/m/
