A way to quick-note and quick-sort an email

I often want to keep notes about an email and on-the-fly sort an email into folders i could create quickly. I'll give an example that I go through somewhat frequently:

1. I purchase something.
2. I get an email with my purchase receipt.
3. I want to create a new folder from the INBOX view itself to sort this new email into.
4. I also want to edit a notes field (that doesnt exist yet) in the table view so I can make a note to myself of what the email is (often subject lines are useless).
5. Then I can select the newly described email into a folder I've just created right there.
