I saw this site in the past (linked from some thread in these forums).
The writer is paranoid. Nobody needs the level of secrecy the writer expects unless their email contains business secrets worth millions, or they engage in some illegal activities, or in politics in countries where that kind of politics is considered illegal.
Most of the collected info the writer complains about is information necessary for the services provided to work, or for them to work reliably.

I see this absolutism over and over.

If you are a spy or a person who has social differences with the financial/political/religious structure in your community or country, then yes you need absolute blind privacy worthy of the strictest review.

If you are someone who wants to protect themself from ID theft, prying eyes, or endless spam, then a moderate level of secrecy and privacy will do.

If you just want your email to work for you without ads, without glitches and efficiently so your day can go reasonably smooth, then functionality is of a higher priority.

If you are just getting emails from friends with cat jokes and ads from the local supermarket, a free email is likely what you are looking for.

You need to know what is your circumstance and then you can figure out what type of email you need.

Just my two cents.

To reduce the risk of ID theft one should separate correspondence with financial entities from other uses of mail. All these measures of encrypting mail would not help with this since practically all major financial institutes don't work with this kind of encryption. If someone is actually determined to steal your identities then there are many sources of information other than email they can use.

The #1 problem is phishing and all the secrecy and encryption in the world will not help you with that. All it takes is for you to click on one malicious link and you can have big problems. Even if your email address is hidden to most, it might eventually be leaked from someone else with weak security. Then they convince you to click on the link with a well-designed message and all is lost. So, in the end the most important factors for me in email are reliability, security of accessing the account (2FA, security keys, infrastructure), and spam/junk filtering. Good services, like Gmail have very robust security and spam filtering that eliminate most problems that ordinary people encounter. But, the #1 factor is yourself. You have to be paranoid, because they are out to get you.
